Wander around the local markets or visit our roadside stores and you will find a huge array of fresh vegies, fresh fruits and home baked goodies.

Talk to Yusuf from the Olive Grove at the next Uki market, for unique Middle Eastern spice blends. All made freshly each week and evoking the cooking of Egypt, Morocco, Tunisia and Ethiopia. If your taste is for fiery chilli then try the Berbere (Pronounced Baraberay). This is the pivotal spice of Ethiopian cuisine. It is the universal seasoning for everything, from the rich mans delicacy to the poor mans piece of bread.

Using spice is simple...says Yusuf. Dont use as a sprinkle at the end. If you generally start with frying an onion, then add a few pinches when they are almost done or rub spice into your fish, meat or poultry prior to cooking. Or use in a marinade, mixed into a paste with olive oil and a little lemon or lime juice and perhaps some garlic.
The object of spices and seasonings is not to mask the natural taste of the food but to emphasise it.
